Our menu brings together two complementary experiences, designed to celebrate the local territory through exceptional ingredients and a constant pursuit of balance between memory and modernity.
The Historic Menu celebrates the Valtellina tradition and the family recipes passed down through generations. Authentic dishes such as hand-rolled pizzoccheri, bresaola from Valchiavenna, and mountain cheeses tell the story of a deep connection with the Alps and their flavors.
It’s a cuisine of memory — built on time-honored gestures, slow cooking, and carefully selected ingredients from small local producers.
The Discovery Menu, on the other hand, represents the contemporary evolution of Chef Roberto Valbuzzi’s cuisine: a sensory journey that blends modern techniques and creativity, where seasonality guides every choice and local micro-excellences take center stage in a fresh new light.
Here you’ll find unexpected pairings, fermentations, wild herbs, and vegetables grown in the chef’s own garden — all expressing a sustainable cuisine in constant search of balance between nature and innovation.
The two menus coexist in harmony and are not meant as fixed paths: guests are always free to create their own dining experience, drawing from both according to personal taste or the inspiration of the moment.
