The Figli dei Fiori tasting menu was created to celebrate the awakening of spring through the delicacy of flowers and early seasonal harvests that inspire our cuisine: a journey of colours and aromas, where each dish becomes an expression of the land.
Our heartfelt thanks go to the local farms and producers who support us every day with passion and dedication.
Wild Garlic
White asparagus tarte tatin by “Azienda Agricola Catella”

Spiced chickpea falafel with yogurt sauce from “Azienda Agricola Scariot” and mint oil
Buckwheat and thyme tartlet with ash-roasted onion, dandelion cream and caramel, robiola ice cream from “Casale Roccolo”, pollen powder, wisteria and lavender
Asparagus
Matcha sponge cake with white vermouth mousse and parfait, tonka bean namelaka, asparagus anglaise, lemon espuma.
